Cannellini Beans

I have 7 cans of cannellini beans to use up. Has anyone got any suggestions as to what I can do with them? They've been in my cupboard a long time and I can't even remember why I bought them in the first place :rotfl:

Add them to soup, use them in a chilli instead of kidney beans. Add to a veg and tomato stew. Make tuna, pasta and bean salad (good for packed lunch). You could also put them in a sausage casserole or make cassoulet (google it and you will get some recipes, my mum makes this but I have never made it)0

You can use them in any recipe in place of pretty much any pulse. They make a lovely 'mash' with garlic olive oil thats particularly good served with pork. A tin added to homemade vegetable soup is lovely, adds protein and a cremy consistency if you blitz it.
You can also make cannellini hummous, same as you would if making with chickpeas, it's gorgeous!

OR you can even make homemade baked beans with them, just make a smooth tomato sauce and simmer them down in it

you can use cannellini beans like mash potato. try mashing up a can with a little garlic oil, parsley, lemon juice + zest and loosen it all with little drop of stock or wine and add tons of pepper..... yumO. this can then be topped on to many many things......i just eat it on it's own tho.... it so tasty. i blame nigella. it was her fault for showing this recipe on tv....
or u can make a nice light salad with same ingredients but leave the beans whole instead of mashing it up and add white wine vinegar instead of the stock and garnish with lotsa fresh or dried mixed herbs....this can be served as a side dish to any main courses esp good with beef....0 -

Going to try the saus cass tomorrow as I've got sausages and potatoes already. Just need to find out what else to put in - apart from lots of cannellini beans!!

Nigel Slater's sausage and bean soup. It's more like a stew, delicious! Served with a side of mash, even my normally bean hating DH loves it.

A few notes though...
I never add the fennel or orange, since I never have them in.
I use a splash (maybe 1-2 TB) of red wine vinegar instead of sherry, since I never have this in either
I usually use a tin of tomatoes instead of fresh, but either way works
I only use half the chorizo and beans, full amounts of everything else. Still get four good portions out of it.0 -
I made a really nice stew in the slow cooker with chorizo, chicken and canellini beans in a tomato and chilli type sauce. Just shoved in some chiken bits, fried off some bits of chorizo to release the falour a bit, a random selection of veg (onion, carrot, celery from memory) then chopped toms, chilli, mixed herbs and paprika i think.
Served with fresh crusty bread loaf was delish

My all time fave meal is to use these beans and fry them in a pan with chorizo pieces and a little chicken or veg stock that you will get from a boiling pan of chicken breast. Then make the beans and chorizo soupy and put a bed of Kale ontop and the chicken ontop of that and sprinkly some paprika ontop the chicken. This looks really nice ,do you think I could freeze portions of it as making it for 6 would be far too much as I live alone but if it would freeze it would be great as I have all the ingrediants in my food stores
P.S. I know he said about using raisins in his curry, but I use sultanas and a roughly chopped apple in my curries and always have0 -

I am starting to prepare this now for dinner tonight for me and other half. I will make mash to go with it and update how it tastes later on tonight.
