Hi, I don't know how to make it, but yes you can buy rye flour from Goodness Direct. I actually buy rye bread, and the ingredients are 100% rye (no yeast).0

Doves Farm make rye flour. I picked some up in Tesco the other day. It's not cheap though. Think it was about £1.69 for a kilo bag.0

Yes - I make a Danish Rye loaf and Krackerbrot - which is kind of like crackerbread.
Which one do you fancy making first?

I occasionally make rye bread, either rye/wheat mixture, or rye only. It has quite a strong 'rye' flavour (think dark ryvitas), and rye flour can be quite sticky and not easy to work with. I use a normal wholemeal loaf recipe, only substitute rye flour for some (or all) of the flour, and add a good dollop of honey for flavour.[FONT="][FONT="] Fighting the biggest battle of my life.
Started 30th January 2018.

DANISH RYE BREAD
This is an ordinary day bread - perfect for sandwiches, or if you slice thinly makes very posh open sandwiches (I'm doing SW so I like to make my bread go far)
It doesn't rise as high as a loaf made only with strong white flour, but tastes yummy.
For a 1lb loaf
175 ml warm water
1 tbsp veg oil
4 tsp molasses
1tsp salt
2tsp caraway seeds (for authentic Danish flavour)
250g plain bread flour
100g rye flour
2 tsp yeast.
Bung it in your breadmaker and set the machine for dough setting if you are going to oven bake it, or wholemeal setting if you are going to bake it in the breadmaker.
When the dough is made, remove fromthe machine and shape into a large ball then prove covered with a lcoth in a warm place until doubled in size.
Bake at 190 C for about 35 minutes (its done when it sounds hollow when you thump it on the base)
RUSSIAN BLACK BREAD - my version of pumpernickel
230 ml water
30 ml veg oil
2 tbsp molasses
115 g rye flour
50g wholemeal flour
175g white bread flour
25 g oatbran
50g dried breadcrumbs
2 tbsp instant coffee granules
1 tbsp cocoa powder
2 tsp carawys seeds
1 tsp yeast
You can throw all this into the breadmaker and as long as you run it on a wholewheat setting with a medium crust you get a lovely loaf.
You can cut into very thin slices for the poshest open sandwiches with cold meat, pates or smoked fish.

I make sourdough rye, which I love but not everyone does! It is easy but takes a while to get the starter culture going.0
