Rye bread

I want to make some rye bread in my panni bread maker.. does anyone have some tried and tested recipes? Nigella has one using 225g rye flour and 300g white flour but i wonder what i'd need to do to adjust it for the breadmaker.

Any ideas?

    I would love to know too. Besides Rye flour, I am thinking of making bread with soya flour as well.

    Anyone has used them in bread making?

    well i just made a lovely loaf and did 2/3 white flour and 1/3 rye and it came out pretty good. I think I got a bit confused because I was expecting really dark flour... what is that bread that is almost black???

    I think it is pumpernickel, probably with some rye added.

    Pumpernickel, which is something I want to make too. I found this tallyrand recipe, which is cooked in a bain marie and this one to make in a breadmaker, but it doesn't look like the right stuff to me :confused:

    I think I'll give the tallyrand one a go this weekend if I can find kibbled rye

    Re Rye flour, I use this quite a bit and usually find I need to add a little more liquid to get good results, fantastic bread though!

    I'm interested to hear if anyone has used soya flour too.

    I want to make rye bread too, but my local Sainsburys don't sell rye flour. Where can I get it? (I live in London)

    I just got my rye flour in my Tesco metro in Bethnal Green... its doves farm organic. My semi rye bread was delicious with gouda tomatoes and loads of pepper for breakfast this morning. I think its my favourite thing I've had out my bread maker so far!

    I think pumpernickel is next on my list, I hope its the one I'm thinking of!

    The dark rye bread is made with sprouted grain. So you need rye grains to start with :-), and lots of patience!

    Health food shops often have it, usually the local rather than the large chain ones. Doves Farm do one.

    If you are anywhere near the city the spitalfields healthfood shop, Spitalfields Organics on commercial Road, usually has it.

    I found a list of the Dove's farm stockist HERE Sometimes the supermarkets put Rye flour with their speciality ingredients instead of the flour section, so it might be worth asking for it.

    Unless you want a very dense bread, use a maximum of 40% Rye to 60% strong bread flour, or 30% Rye, 30% wholemeal and 40% strong white.

    The Rye and Caraway recipe from the Panni book is pretty good too but I've made a few changes to it over time and now use this variation.

    Large loaf

    1 tsp yeast (easyblend or see below)
    300g strong white bread flour
    150g Rye flour
    3 tbls sunflower oil
    1 tsp salt
    2 tsp caraway seeds
    2 crushed Vit C tablets
    325 ml tepid water

    My preference is to use the orange tubs of Allinsons yeast and pre-mix 1 tsp yeast with 2 tsp sugar in all of the water for this loaf, stir and leave it a good 15 mins or so to let it get the yeast well started. Then add it to your Panni, on top of the flour and switch the machine on straight away.

    I also find I get the best result by just whacking it in on a white rapidbake programme, but then my Panni is still traumatised from the burning seeds episode, bless :o

    Aparently the the bread I was thinking of is called Pave Multicereales but I've never heard of it before?? Any ideas?
