How to restore or update your iPod/iPhone/iPad:

After downloading the desired firmware below, you can shift-click (PC) or option-click (Mac) the Restore or Update buttons in iTunes. A file dialog will open and let you choose the downloaded ipsw-file.

Note: Your browser may change the ipsw-file into a zip-file. In that case, just rename it to end in .ipsw and iTunes will accept it.

Apple has stopped 'signing' IOS5 firmware, this basically means when itunes tries to authorise the 5.1.? firmware it will fail.

I am afraid you are stuck on IOS6

(Unless of course the ipad had been jailbroken in which case its another story)

Is there a worthy reason why you want to go back to iOS 5? Most of the current Apps and iTunes will be running supporting the new iOS 6 so i assume soon you can't run away from it.
Better to understand a little than to misunderstand a lot.
