Blocking up old chimney advice

Hi everyone,

We are in the process of renovating our kitchen and need to block up an old fireplace that used to house the original range cooker (so quite big). Currently we have a gas Rayburn in the alcove, flued up the chimney, but it is being ripped out. the chimney is already rain capped (?) for this. I know you need ventilation from both ends of the flue, but we are putting kitchen units into this alcove so dont want a vent directly above. how can we do this?

The idea i've had is as follows but no idea if this is feasible:
- fix batons to back of fireplace opening and cover with board, leaving an inch deep gap between the plasterboard and the back of the fireplace. Dont take board down to floor level and install a vent at the top of the opening (where the flue starts) OR take board to the floor level and put a vent near the bottom there, so it is hidden below the kitchen units. This would give a space behind the boarding of an inch deep by the width of the fireplace (120cm). The rest of the flue opening (to the front of the fireplace) will be covered with the appropriate boarding, with units and a work surface placed below.

I hope all that made sense! As much help as you can offer will be gratefully received. Don't want to end up with damp problems.
