when using an online estate agent as a vendor who do you hand the keys to once a house sale has gone through?

The buyers! (If you've not got ID for them already, I suppose it would be advisable to. I'd also get them to sign something - check their signature against their ID.)

Our buyer's daughter lived 3 doors up from our old house.
When we had moved out I went round and gave the keys to them, probably the wrong thing to do and against the rules but I thought what the hellm, the money has transferred it's her house now.Sealed pot challange no: 3390 -

It is entirely up to you and your buyers to agree.
Give it to them in person; do it via solicitors (if local/comvenient); Use a neighbour;
As long as
a) both parties know exactly what the arrangement is and
b) there is a clear and efficient means of communication (ie to confirm when funds are received & keys can be released) and
c) there is a means of confirmation i) the right person has been given the keys and ii) the keys have been handed over (eg ID check and signature, or use of a trusted solicitor)
then you can do whatever you want.
In theory you could agree to leave the keys under the 3rd stone on the left by the back gate, but of course that would be a nightmare if the buyers denied the keys were there and charged you for their hotel bill when they couldn't get in!0 -
