I have a rescue greyhound-I let her off in every park I go to and she comes back every time.
I highly recommend clicker training-worked really well for us.As for exercise she's happy with 2 twenty minute walks on days when we just can't manage longer, but equally likes an hour in the park most mornings. She sleeps the rest of the time, so actually I would say a greyhound would be perfect for someone with a heart condition.Oh and she flatly refuses to go out when it's raining hard.Debts Jan 2014 £20,108.34

I know small rescues are usually staffed by volunteers but a quick call/email doesn't take long, does it?
Depends how many e-mails and phone calls they receive in a given day and whether they have enough volunteers to answer any/ all of them unfortunately.

I don't know much about dog breeds, but I remember reading about an old dog would be more relaxed at home and won't need too much walk/exercise. Also, I think I heard my friends saying that long-haired dogs don't actually lose hair that much as opposed to those with short double coats. Not sure if I understood them correctly though. Hope you get the breed that's most suitable for you.
