Can anyone tell me what to do with samphire... just bought some in Tesco for the vast sum of 15p!

If I could only get my hands on some samphire, I would try one of these recipes:
Yotam Ottolenghi's warm potato salad with sorrel and samphire recipe
(since sorrel is out of season, I would use fresh spinach)

oooh, samphire! Love it! I usually just lightly boil it for 5 minutes, no need to salt the water, and serve it on the side with a wee splotch of butter.0

its like marmite - you either love it or hate it!
Rinse it well and cook in boiling water for five minutes, or steam or stir fry as others have said. drain, add a little butter and pepper and serve - its gorgeous with all fish dishes!0 -

and for a pickle to store:
blanch the marsh samphire for 3 minutes then plunge into cold water, then drain. Pack into sterilised jars and cover with cooled spiced vinegar. Use vinegar proof lids to seal. Ready in 2 weeks, keeps for 6 months to a year.0 -
I love samphire, but it's out of season now? Did you buy it in the supermarket? If so, I guess its imported from another country. If its from this country it will be really woody and unpleasant at this time of year.
I usually serve it quickly boiled with a big slodge of butter and a grind of black pepper, either as an accompaniment to a fish dish, or as a simple supper with fresh bread and butter. It's nice served with poached eggs too!0 -

I love it, too, but have only had it as a treat in a restaurant. Naturally VERY salty, so rinse well, stir fry and add some butter - basically what everyone else has said. Enjoy!0
