Help with biscuits please

Hi again
Im wondering if im the youngest person on this board at 24?
Anyway I see no shame even at my age in trying to save and having the home made is yummy way of life instead of all my friends who eat nothing but takeaways. Anyway to my askings. When I was at school we used to have these yummy biscuits. They were sweet and had part of the mixture removed and jam added to the missing mixture hole. So I guess im asking for if anyone would be as kind as to share any sweet buiscuits recipes? I promise I shall report back on how long they last in my house.
Thanks for all your help so far and I hope im not appearing to be a pain asking all of these questions!

    I'm 23 so you're not the youngest :p although you've just reminded me I'll be 24 soon :(

    I'm not sure what sort of biscuit you're looking for but empire biscuits (http://www.rampantscotland.com/recipes/blrecipe_empire.htm) are yummy and they incorporate jam without having holes in them although I'm sure you could modify them to look how you want.

    I've been Money Tipped!
    Try these:
    Golden Oat Cookies

    3 oz plain flour
    1/2 level tspn bicarb of soda
    3 oz caster sugar
    3 oz rolled oats
    3 oz butter or marge
    1 tablespoon milk
    1 level tablespoon golden syrup

    Grease 2 baking trays. Sift the flour and bicab of soda and stir into the sugar and oats. Heat the butter, milk and syrup together until melted, pour onto the first mixture and mix well. Roll into small balls the size of a large walnut and place about 4 ins apart onto the baking trays. Flatten slightly with a fork dipped into flour. Bake for about 25 - 30 mins at gas mark 2 or 160 C until golden brown. Cool on trays for 2 - 3 mins then using a fish slice or palette knife remove and pop onto a plate . Yummy! :)

    You wouldn't be thinking of Raspberry Buns would you? Although called 'buns' they are more like a soft biscuit really. I found a couple of recipes for you to have a look at...

    Old Fashioned Raspberry Buns(Scottish)

    8 oz SR flour
    3 oz Caster sugar
    4 oz Margarine
    1 Egg, beaten
    2 ds Milk
    Raspberry jam
    Caster sugar to dust

    Set oven to 425F or Mark 7. Grease and flour baking sheets. Sift the flour into a bowl and rub in the margarine. Add the sugar and the beaten egg with enough milk to make a fairly stiff consistency. Divide the mixture into about walnut-size balls and place on baking sheet, allowing space for them to spread slightly during cooking. Make a small hole in the centure of each bal1 and spoon in a little rasberry jam. Pinch the edges together again. Dust lightly with caster sugar. Bake for 10 minutes then reduce heat to 350F or Mark 4 and bake for a further 5 minutes. The buns should be light golden in colour. Cool on a wire rack


    Raspberry Buns

    1 cup all-purpose flour
    3/4 cup rice flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    4 tablespoons butter
    1/4 cup granulated sugar
    1/4 cup tepid milk
    1 large egg, beaten
    8 to 10 teaspoons raspberry jam

    Mix the flours, salt and baking powder together. Rub in the butter and then work in the sugar. Add the milk to the egg and mix them into the dry ingredients. Form the mixture into eight to 10 balls and place them on a buttered baking sheet. Make a well in each ball with your finger and put 1 teaspoon of raspberry jam into the well. Fold the dough over the well to seal it. Bake the buns in a preheated 400 degree F oven for 15 to 20 minutes or until golden brown. Let cool.

    Ohhh that brings back some memories!!! ... they were one of the first biscuits I ever learned to make as a wee girl :D
