Beech Worktop Treatment

I've just acquired a piece of solid beech 40mm thick worktop, that I am using to build a breakfast bar.
I want to sand it down and retreat it.
Views on what to use seem to differ after a quick google search. I've had some good recommendations in the past with stains from here such as Osmo door oil etc which I was delighted with and why I suspect someone will have the right product suggestion again.
So, what do people recommend I coat the beech woktop with once I have sanded it??

Many solid worktop suppliers give you a can of Danish oil when you get a new top. Most kitchen installers will also recommend this.Eat vegetables and fear no creditors, rather than eat duck and hide.0

Oil it, oil it, oil it and then oil it again. Redo it after 3 weeks, then after another three weeks then at 6 weekly intervals gradually increasing to about 12 weekly intervals. Get as much oil as you possibly can into open grained ends too.
