Question about long grain rice/rice pudding

I've never cooked rice pudding before, but after looking at my bank account I think I'm going to have to be a bit creative over half-term week! Can anyone suggest an easy rice pudding recipe? I have a slowcooker if necessary, and the following things that seem rice-puddingy but I'm not sure how to put together:
Long grain rice
Whole milk
Eggs
Cinammon
Butter
Erm... that's it. No nutmeg I'm afraid. Can I make this into a pud or am I better sticking to eggfried rice?!:o0 -
I'd buy a pack of pudding rice for about 50p. You only need a couple of ounces for 2pt milk (I prefer full fat for this) and a couple of ounces of sugar. Freshly ground nutmeg is nice but not essential. You need a low oven 150C or thereabouts. Put all in ovenproof bowl with a knob of butter and cook for an hour and a half or so. Stir after an hour and watch carefully after that. I pull a bit of skin away to check underneath because we like the skin nice and brown but like our pudding quite sloppy. Enjoy!0

Well, a scout of the kitchen cupboards unearthed a bag of Bettabuy Basmati with a short date - so in it's gone! I figured that had more possible pudding potential than long grain or wholemeal!0

Hi All, as the title asks "Can I make rice pudding with long grain rice?" I have half a tin of coconut milk spare and wanted to use in a rice pud for tea. However we only have long grain rice (and plenty of it, lol). I know you're supposed to use short grain 'pudding' rice but has any one made it with other rice before? It won't be very OS if I go out and buy pudding rice when we have loads of the other stuff, especially as I only plan to make it to use up the coconut milk.

Did i read on these forums that you can make rice pudding with normal dinner rice? I have so much rice and dont want to waste it and now i can't find the thread.

the way to use normal white rice for a pudding is to cook the rice in water first (no salt) until done. then heat up some milk or milk and cream and to then put the rice in and simmer very gently for about another ten to twenty minutes. I cant give you exact quantities, but I am fairly sure this is how the barefoot contessa did it. try the foodnetwork site and search rice pudding barefoot contessa - it should be on there.0
