I know M&S make a lovely mixed berry fruit compote but even if i was still in the UK my christmas budget wouldnt stretch to M&S this year so i was going to try and make my own.
I want to use it in brandy snap baskets which will be first filled with cold custard, then the compote and topped with HM vanilla ice-cream.
Does anyone have a seasonal recipe that is fairly easy to make?

Hi Pix
I've made Delia's mixed berry compote a few times and it's been pretty foolproof, I've even made it successfully with frozen berries.
The ingredients are:
8 ounces plums
8 ounces cherries
8 ounces raspberries
8 ounces strawberries
8 ounces blueberries
and 2 ounces of golden caster sugar
put the plums, cherries and blueberries (minus stones) in an ovenproof dish. Scatter the sugar over and place in the oven at 180 degrees c for 15 minutes. Remove and stir in strawberries and raspberries (while still hot). Cover with cling film and leave to cool.
The strawberries and rasps don't need any cooking (unless the strawberries are not ripe enough and they should just melt in.
Sometimes I add port or some brandy to the cooled compote, depends on how I feel. If I'm feeling more adventurous I may use vanilla sugar instead of plain caster.
I've kept it in a sterlised kilner jar for 4 weeks or so. It may last longer however it has always been used up in our house by the end of the month or so.
