You can't do that.
You'd need a safety shut off valve to cut the gas if the lid was put down by accident and there's not a prayer of retro-fitting a lid I'm afraid. If anyone CORGI registered ever saw a fold down lid there with no shut-off they'd condemn the installation and issue a safety notice, probably switching off your gas supply as well.
The only thing you could do is fit a sheet of tempered glass behind it somehow, at best.

I think in some markets that they are allowed, but not in the UK without the safety valves, which makes them expensive and no-one bought them. I've certainly not seen one with a lid for many, many years.
You could always by the Fisher & Paykelone that sinks when not in use leaving a flat glass panel, bit pricey though, from memory about £1000.
