Big roast on a budget

Just a quickie to let you know that at the minute sainsburys have their large beef roasting joints (the ones that are in the vacum type packs) at 1/2 price so £4.99 per kg. You could always get one and freeze until you need it x0

When I do a big roast for large numbers I use my large slowcooker and plonk either a large piece of pork or gammon or sometimes beef if I can get a catering size lump from the butchers or supermarket.
The stock makes the best gravy.
Also you can precook, slice, make the gravy and put it all back in the slowcooker so its good to go on the day and you're not slaving at the cooker.
Sometimes I use a smaller slow cooker for the gammon. That way the cooker is empty to fill with all the other things like yorkshires and roast potatoes.
I stack the steamer for the veg, again utilising the space, essentially 3 pans in one.
Mash always goes well as does this family favourite of ours which I make a lot, very moreish....http://www.foodnetwork.com/recipes/nigella-lawson/creamy-potato-gratin-recipe/index.html. Again I do a huge amount as its great for leftovers.
However I have a pressure cooker now and did christmas dinner (last year) the night before as we had friends over and I wanted to be sociable and not stuck in the kitchen all day.
Turkey crown was cooked in the pressure cooker, sliced and then put in gravy in a huge oven tray ready for reheating. Was delicious and moist and minimal effort on the day.
You could do this with any meats eg pork, gammon, chicken, turkey or beef, all pre-prepared and ready to go.DFW Nerd 267. DEBT FREE 11.06.08

We very rarely manage to get all of us together, so we really dont mind a lot of work for this one time.
Tesco have boneless leg of pork on offer at the moment for £2.99 a kilo, on the normal chiller shelves, with some largish legs included (£12ish size).
On the fresh meat counter, the same meat is £3.15 per kilo but they have larger joints .0
