I really want to try and make my own jam but because we dont eat vast amounts of it, im going to use the lakeland maker thingy instead of making it by the truck load. However I for medical reasons i cant eat anything high in sugar so when i buy jam its always reduced sugar ones.
Does anyone know a nice raspberry jam - low sugar recipe?

Sorry if this has already been covered but I wondered if it is possible to make homemade sugar free jam? I made rhubarb jam last year with fruit we grew ourselves, and it was amazingly good!! But I'm on a diet, and shouldn't really eat it!
Does anyone have any recipies? We also grow strawberries, blackcurrants and raspberries if these make better choices.

Hi Brighid,
Sugar is the main preservative in jam so it is necessary if you want to keep the jam for a long period but I'm sure that I've read somewhere that jam can be made using artifical sweetners but it has less of a 'shelf life'. Personally, I'd prefer to make real jam and just use less of it if I was on a diet.

Perhaps you'd get a decent result by cooking the fruits down or just pureeing them and then freezing them? You'd have to freeze them or they'd go off because the sugar preserves them. If you rely on freezing as a preservative then you can use as little sugar as you like and it will still be safe to eat.0

And I like the idea of freezer jam, I'm sure my Grandma used to make something called that....

Does anyone have any experience of using low methoxyl pectin to make low sugar or diabetic jams? I have loads of fruit I want to turn into jam, but one relative is on a diet and the other is diabetic. I've found a supplier online but wanted to know if it's worth spending on before I shell out.0

500g fresh or frozen fruit.
sugar free jelly
1/2 pint sugar free lemonade
method,
fruit in pan with lemonade, cook until fruit is done,keep stiring add jelly at the end of cooking wait till cool then bottle, but keep in the fridge, i use smaller jars, mine keeps about 10 days0
