Well, I always think 'offer ends 11/9/12' to mean it will finish tomorrow (inclusive of tomorrow).

Right. You CAN NOT (according to the T&Cs) put money on a money card and then pay for it with a voucher.
However, you can hand the cashier a money card when the transaction starts (the Christmas saver one is ideal because they expect people to do this adding small bits at a time) and ask for £5 on it. They do that then give it you back then continue scanning your shopping. By the time they get to the total they have forgotten you got a money card so accept your voucher as payment.
