I would use something like that pledgex for a conventional picture but I don't see how you get canvas flat because if you put eyelet screws in frame then the frame isn't flat anymore surely ?
OH is wondering about mirror fittings..
You put the eyelet on the inside of the frame, i.e. fix it parallel to the canvas itself. This image might help explain:

Obviously this is only possible if the frame of the canvas is chunky enough.1 -
Re: the horsehair plaster most of it is in very good shape, we ended up scraping off up to 12 layers of wallpaper ourselves and being very careful.
Husband went to several DIY sheds and came back with some brass mirror fittings which he tweaked and achieved desired result
Room is 90% finished now and have to say it looks fantastic and I'm really pleased. :T for OH

Ours are hung with nails, but I find blu tac under the bottom corners helps keep them level as they are so light that they move easily
