Sandwich tins

I am wondering whether you could help me? (if this is in the wrong place, I apologise; I'm an avid reader of these forums but I rarely post).

I've been rather busy lately (I got married in August!) and I've had lots of study for my OU physics degree to complete by the end of August (along with looking after my two young kids as a SAHM - my eldest has gone to school again, thank goodness!). I have an ex*m on the 16th October, but since I find it impossible to study when I have my 20month old son, I have a bit of time to fill during the day.

So I thought I'd try my hand at doing some baking and blog about it as a diary. I know I can get a vic sponge from the supermarket for next to nothing, I think it tastes horrible and I want to control exactly what goes into the food that I feed my kids. I already cook practically every main meal from scratch and I want to extend this to other things, such as bread (the price of bread is shocking!) and flapjacks etc.

Start simple! I thought, and make a victoria sandwich. I got my sandwich tins out and found, to my horror, that the non-stick tins are really badly scratched. THIS must have happened when I went on a residential course for a week and left my husband alone with my two kids :o

I need new tins.

Has anyone got any recommendations? I've got quite a bit of cash in TCB so I can exchange it for Amazon vouchers but I have no idea what would be a good investment...

  • if its only the bottoms of the tins i would just use baking parchment or grease prooof papaer to line the bottoms, i do this anyway as no matter how well i grease the tins i struggle to get the bloomin cakes out in one piece

    Yup, the disc of greaseproof paper trick works every time. Unlike non-stick, which is presumably how they got scratched. ;)

    or invest in some silicone bakeware I wouldn't trade mine now despite have a load of pampered chef bakeware :o

    Not very MSE buying new tins.

    In the pound shops there are non stick packs of lining paper for baking sheets , cut two rounds out of it and put those in the bottom of your tins, when youve taken it out, just wash them and use again and again. Same with sandwich tins

    Gues your OH has been cutting the cake while it was still in the tin then.

    Rock buns are great and I'm a chuck it all in gal myself. My husband does the Victoria sponge out of the Bero book and doesnt mess about, everything gets chucked in at once, and they are blummin' lush

    When I use the tins I reserve them for baking cakes, and use the greaseproof paper at the bottom.

    What I think has happened is that he's used it as a baking tray to cook frozen chicken or whatever, then couldn't remove them and used something sharp to get the food off. Dunno, I will ask him when he gets in from work!
    I've got a silicone loaf tin that I bought on a whim a couple of years ago and I find that it doesn't hold the shape of the cake? My lemon drizzle was lovely, just had bulging sides...
    They are a bit old and battered anyway, so I'm not adverse to replacing them. I just want to make sure I buy something worth buying!

    If you have the money to spare ..my sandwich tins are from Lyvstill (SP?)...expensive as they were £16 each..(mum paid for my birthday present)..but they are 2 years old now and pristine..DW proof but I hand wash...takes seconds...I grease them slightly..no paper and nothing ever sticks xxxx
    Feeding 6 Adults 1 Teen a 8 year old with hollow legs and a very fussy 5 year old. Also 3 cats and 3 fishies
    To include all Food,Toiletries and Petfood.

    Off the top of my head

    8z flour SR
    4 oz sugar
    4 oz marg
    1 egg
    a little milk
    Mixed fruit cheapo bag at any supermarket.

    Rub the marg into the flour, add the sugar mix it in, put in as much of the mixed fruit as you want, add the egg and a little milk, mix it all up, put it into piles on a baking tray, 170 for about 15 minutes or till they are golden brown, (they will still be a bit soft, but will get 'rocky' as they cool.

    I'd just line the tins, I line all my tins anyway BUT not all baking papers are equal. Just sayin' - the last stuff we got from Mr T was as good as useless.

    I get huge rolls from the cash and carry now for about £8 which is brilliant stuff (baking parchment it's called not greasproof) it's so non stick you can't even draw round the bottom of your tins on it with a pen.
