MAKE A CHRISTMAS HAMPER - what can you put in it….. go round your charity shops and buy wicker baskets from them first then add your contents….
SLOE GIN
Know people who make wine or beer, well we have a winter warmer for you which is so unbelievably easy and a great Christmas present for friends or family .... Sloe Gin/Sloe Vodka - collect a bundle of sloes (blackthorn berries) late October, early November and use any gin (I mean ANY gin or vodka). October is the time to find sloes in the hedgerows and all you have to do is wash them, !!!!! them with a pin (folktale says you should use a thorn taken from the blackthorn bush), put them in a wide necked bottle to the halfway mark, add 4 oz of sugar for each pint of sloes (570ml), fill the rest of the bottle with gin, put the top on and turn several times to mix and put in a dark place. Turn every day for the first two weeks then weekly for at least three months. It's a great present to give to people in a basket - homemade sloe gin.... what a great Christmas present.
BLACKBERRY BRANDY
3 cups of blackberries (freshly picked or frozen, 500ml vodka (supermarket own)500ml brandy (supermarket brand) 12oz sugar (around 500ml on measuring jug), optional - whole cloves or shaved lemon peel.
Put equal quantities of sugar and blackberries into jars (the jar that pickling vinegar comes in is a good size and hold around a litre), pour in 250ml of vodka and 250ml of brandy, screw on lid and shake hard, keep in dark spot and shake once a week. Strain through sieve lined with musin and pour into bottles - 500ml bottles are good so save them throughout the year.
BROWNIES – Get a large jar- put in the ingredients for making brownies and layer them so it's a really pretty jar.CHUTNEY - These originated in India and the word is derived from the Hindu word 'chatni' Unlike jam making, windfall apples, green tomatoes and other end-of-season fruit such as rhubarb can be used as there is no worry about the setting qualities. They are made from fruit or vegetables or a mixture of both, cut, cooked, mixed with spices, vinegar and other ingredients and reduced to a smooth pulp. What do you need: stainless steel pan, wooden spoon, sieve, heatproof jug or wide necked stainless steel funnel, muslin or cotton squares to tie up spices, scales, chopping board and stainless steel knife. The stainless steel is important as most other metals will react with the vinegar and taint the flavour of the chutney. You'll need heat proof jars (which can be sterilized by putting in the oven for a few minutes), covers (vinegar corrodes metal so use plastic screw or snap on types) Specialist preserving or bottling jars are suitable, either with screw-on or clip-on lid, providing the lid is made of glass. And don't forget labels.
Vinegar - Malt, white or wine vinegar can be used but it must have an acetic content of at least 5%.
Sugar - white or brown (gives a darker colour)
Spices - use whole spices, bruise them and tie them up in a muslin bag and cook with other ingredients.
Long slow cooking will result in relatively smooth texture chutney. After it is made, it will take at least three months to mature (although lots of people eat it straight away).
500g green tomatoes, 500g red onion, 250g sultanas, 1 teaspoon ground green cardamon, 500ml malt vinegar, 250g brown sugar, 1 tablespoon salt, 1 teaspoon cayenne pepper,
Chop everything up and put all ingredients in pan, bring to boil then simmer for about an hour, spoon into sterilized jars and label!!!!
If you want to be a little more creative then you could add a couple of teaspoons of mustard seeds, some chopped chillis, some chopped dried apricots or apples and/or a tot of cider.
