    i have had 2 friends over for a few days and made the cake on thurs - there's not much left now!!! ;D we all really liked it though i think i would put less oil in last time as its quite greasy. my friend's a chef and she said to start by putting 3/4 of the recepie amount in and going from there. also thought i might try it as a bit of a tray bake rather than a round cake.

    I passed this recipe onto a friend and she made it as a tray bake and topped it with a mixture of cream cheese and melted chocolate. It turned out far nicer than when I made it. :)

    A few months ago I came across this recipe on another thread, it's been a firm favorite in our house ever since - remember beetroot is low GI! I think it needs to be remembered.

    The only thing I've changed is that I cook it as a cake in a swiss roll tin, rather than seperate muffins. Sometimes I sandwich it with some black cherry preserve and it's lovely with greek yoghurt too.

    By the way, mines just come out of the oven!:D

    I have never made this, but have tried some at a friend's house. It was lovely and if I wasn't trying to stay off cake, would definately make it.

    I remember making this for my mum years ago and she said "I'm not eating that!". Needless to say there were several others who helped me devour it in no time :)

    Yes, I've made the chocolate beetroot cake (as muffins). In fact, my lads took some in to school to offer round their friends to guess the mystery ingredient :rotfl:

    I've also made the Campbell's Mystery Cake - or rather, my d11yo and I made it. D11yo had an absolutely hilarious time offering the cake to his dad but without letting on the mystery ingredient - his face when d11yo told him what was in it was a picture! :rotfl:
