Hi guys, so this week is quite special because I have the week off work, due to a new promotion (How good is that?!? New job and a week off!!!) :j So that means I am going to be at home more; spending some much needed quality time with OH and looking after him properly!
So this week the the meal plan is nothing like we would usually have but we are both looking forawrd to it!!
Monday - Away
Tuesday - Away
Wednesday
Dinner - Steak, hassleback potatoes, green vegetables and HM peppercorn sauce. Then HM lemon cheesecake for afters. The steak was in the freezer - YS sirloins from Mr T - reduced to £1.12!!!
Thursday
Breakfast - American bacon, sausage, poached egg, mushrooms, grillde tomatoes and HM potato scones.
Lunch - HM vegetable soup and HM bread Rolls
Dinner - HM "American" Burgers with fries.
Friday
Breakfast - HM buttermilk pancakes, american bacon, HM hash browns and sausage.
Lunch - South western salad.
Dinner - HM chili cheese dogs, fries and salad.
Saturday
Breakfast - Smoked ham eggs Benedict
Lunch - **Biscuits and Gravy** Possibility - slighty unsure on this one.
Dinner - HM vegetable soup and HM bread Rolls
Sunday
Breakfast - HM croissants, cured ham and cheese.
Lunch - HM tomato soup and HM bread rolls
Dinner - HM cornbread, BBQ ribs, HM fried chicken, HM blue cheese dip, corn on the cob with HM coleslaw. Then all American sundaes for afters. OH's mum and dad will be here for that one so thats why there is SOOO much food.
Even though this is a "special" week menu wise I have still tried to be as OS as possible. The "shopping" this week only came to £22.37 at Mr T for the whole menu - so that is still cheaper than going out for the evening!! Oh yes and there is a HUGE american theme running through this - bloody OH and his desire for the states :rotfl:

It's this recipe except I use chicken thighs and add a pepper chopped into strips. Oh and normal chillies instead of jalapenos - you could use dried too. If the chicken thigh looks a bit measly I'll add half a tin of butter/cannellini beans to bulk out rather than more chicken as I reckon it'd also be quite nice as a vegetarian option with aubergine and beans. Been lurking on here for a while and thought 'bout time I threw my t'penneth in. We're a family of four, carnivores but trying to eat less meat for financial and health benefits. I make most meals from scratch (save fishfingers!) and am always looking for ways to cut costs. Think this all cost about £35 this week but need to check receipts to verify that.
Breakfasts- porridge, cereal,toast, fruit juice
Snacks - fruit, dried fruit, bread sticks, dark choc digestive biscuits (nom nom - for me!!)
Mon - chicken and artichoke pasta
Tues - smokey sausage and bean casserole with bread and choc mousse for pudding
Wed - split pea curry and rice (fishfingers, peas and potatoes for kids)
Thurs - Bean chilli, wraps and sour cream (petit filous for kiddiwinks)
Fri - left overs from thursday (phew day off for me!)
Sat - hm pizza and fruit yoghurt lollies
Sun - roast chicken and plum crisp
Thanks to all for your plans. Helped me out of many a stuck moment when I've been too tired/lazy to work something out for the week!0 -

Oh dear lord this week is NOT going according to plan! Work has been hectic, and I got home 1 hour and 40 minutes later than I should monday and tuesday which lead to takeaways both nights! Mondays and tuesdays I SHOULD finish early, which is why I usually plan meals that require a little cooking on them, but it looks like I now need EASY/reheatable meals every work night. (I can't even get OH to do the cooking, as I am never sure what time I would actually get home!)
SO how it looks now:
Mo-[STRIKE]pesto crusted trout with new spuds, piedmontase peppers and salad[/STRIKE]takeaway
tu-[STRIKE]lamb chops, peas and carrots, saute spuds[/STRIKE]takeaway
we-j[STRIKE]erk pork, corn on the cob, coleslaw[/STRIKE]moroccan veg & squash stew with flatbread (possibly trout if it still good from monday)
th-[STRIKE]chianti baked meatballs, pasta, salad[/STRIKE]cheese omelette and salad, or lemon sole and veg
fr-[STRIKE]lemon sole, veg and new spuds[/STRIKE]chianti baked meatballs, pasta & salad
sa-[STRIKE]spiced duck ramen[/STRIKE]jerk pork, corn on the cob, coleslaw, roasted new spuds
su-roast of some sort. Maybe beef, possibly kleftiko.0 -
I'm out nearly every night next week, so very limited time to cook and need to sort out packable dinner as well as lunch every day. Here's the plan:
Mon: Caramelised onion tart (made on Sat) with mixed salad / Pasta and pesto with peas
Tues: Caramelised onion tart with mixed salad / Ham and mustard baguette with coleslaw
Weds: HM minestrone (from freezer) with bread roll / Lentils with Toulouse sausage
Thurs: Pasta and pesto with peas / Lentils with Toulouse sausage
Fri: HM minestrone (from freezer) with bread roll / HM burger and potato wedges
The cupboard's pretty much bare at the moment, so my shop will be more expensive than usual, but using puff pastry and sausages from the freezer, that should all come in for just over £8.0 -
I'm a bit late this week but here is mine:
Fri: homemade chicken satay curry and rice
Sat: BBQ
Sun:sticky Chinese pork, noodles and cucumber salad
Mon: homemade chicken kebabs in pitta bread
Tues: sardine linguine
Weds: garlic mushrooms on toast
Thurs: cod in a tomato and thyme sauce with runner beans and saut!ed potatoes
