  • BB, paying off my mortgage would be wonderful but not something I can achieve in the next ten years or so :(

    Today we have a chicken breast, bought from the local Chinese shop and because I bulk bought, the cost of that was £0.63p, I have cut it up into small pieces, added half a packet of frozen casserole mix from FF, 2 chicken oxo cubes and some seasoning. So, chicken £0.63 + £0.16p oxo cubes & £0.50 for the frozen casserole mix, potatoes for mash £0.20p dinner tonight cost us £1.49. All cooked in my thermal cooking bag so only 10 mins of gas needed too :j. I am hoping there will enough left over for me to have for my lunch tomorrow.

    Having a freezer clearance here. 500g pkt cooking bacon, put into food processor. 500g peeled onions ditto. Mixed up in bowl with a couple of pinches of dried mixed herbs. Spreaded out on a baking sheet which was put into meat tin to catch the drips, into oven for about 1 hour. Was surprisingly tasty. Did 2 of us twice with vegs. and gravey. Don't think you could make anything any simpler.(or much cheaper)jac.xx

    The leek pie was wonderful :D, thank you BB. I added some very lazy garlic too. I served it with broccoli and there is half left for tomorrow night. I made a big pot of vegetable broth for lunch today, so tomorrow can be a day off cooking for me. I think I might use the extra time to give the fridge a good clean and do some baking.
  • Had the chicken and sweetcorn soup for lunch and it was really tasty and cost virtually nothing, just the chicken stock that I made from Sunday's carcass, the last of the left over chicken, a couple of handfuls of sweetcorn, some fresh thyme from the garden, 1oz flour, 1oz butter and splosh of milk probably cost about 50p with sliced garlic bread that I had in the freezer (34p) 84p for four good sized bowls :D

    I am doing a bacon pasta tonight:

    Half a pack of Sainsbury cooking bacon (preferably smoked) diced 58p

    8oz pasta (225g)25p

    A tin of chopped tomatoes 25p in Morrisons (4 tins of KTC brand for £1)

    Tsp mixed herbs 2p

    S&P

    A little sugar to cut the acidity of the tomatoes

    clove garlic 20p

    1 onion sliced 10p

    squirt tomato puree 5p

    mushrooms from the freezer (the cheap ones that I got on Saturday)25p

    broccoli from the freezer ( morrisons basics which cost 50p for a kilo bag) so approx 15p worth = about a good handful

    First put the pasta on in boiling salted water

    Chop bacon and fry, then remove from pan, cook the onions in the bacon fat and then add the mushrooms followed lastly by the clove of crushed garlic.
    Cook gently until the onions are translucent, taking care not to burn the garlic, return the bacon to the pan, and add the tomatoes, puree, broccoli, herbs, sugar and S&P.
    Simmer gently.

    Toss the pasta through the sauce and serve.

    Total cost £2.35 so 59p a portion





    You can add any veg that you like that cooks quickly such as peas, sweetcorn etc

    If you want to use a shop bought sauce you can

    I made this curry at the weekend and it is lovely. I didn't use fresh coriander as I had none in & I substituted the green chilli with a teaspoon of very lazy red chilli. I also added a cup of water. I had managed to get a large cauliflower and the curry gave 4 good servings. It is going on my list of good budget meals.
