Why do my fairy cakes stick to the paper cases?

:confused:

I've been using paper cases that I bought from Lakeland and a standard sponge mix for the cakes but the cakes just don't want to leave the wrappers (the paper cases).

Should I just ditch the cases or is it the mix that's wrong?

It's so frustrating at the moment most of the cake is getting left on the case.

    This happens to me sometimes too, I think it might be when I make lower fat muffins. Would be interested to hear anyone else's wisdom :confused:

    fairycakes always stick to the cases.. if you dont want cases on them grease the tin and dont use cases!

    Yes but mine don't peel off - at least not without taking half the cake with them!:confused:

    possibly the mix....i dont think much of basic cake mixes anyway...try your cases with a basic sponge mix and see how that goes?

    Let them cook for a minute or two longer.

    You know when sponge cakes (large or small) are cooked thoroughly when you poke the top (gently!) with your finger and it springs back. If the mix is still sticking to the cupcases, it will most likely be because they are not cooked thoroughly.

    Some cake cases are just a bit rubbish ... (not being rude about any particular company here lol!!) The more 'papery' they are the more they tend to stick. I've found it to be particularly bad with the metallic ones, and really cheap ones. The best kind are the ones made from greaseproof paper.

    I've also found in the past the more sugary cakes tend to stick more ... maybe the quantity of sugar is a bit off in your recipe?
