Am I right in thinking that most phones that support contactless payments (IE. Google wallet, when it comes into the UK) will support both EMV and Magstripe contactless transactions?
Yes, the terminal constantly broadcasts what it supports when it's enabled so the card can start in the correct application.
As far as I know if Google Wallet is enabled in the UK I believe the terminals will need to support MSD as EMV is dependent on their being a secret in the chip that only the bank and card knows. Unless the banks organise an alternative method to handle things such as Google Wallet and give it a different code for example.0 -

Thanks that clears some things up. I've done some of my own research and from what I've gathered most USA contactless readers post 2009 are globally interopable. That would explain why I've been able to use my contactless card in a cab but not in 7-Eleven in the USA.
"Regardless of whether magnetic stripe or EMV is the core payment card infrastructure being leveraged, contactless payment program specifications developed by the payment brands are designed to be globally interoperable at the point-of-sale."0 -

To answer the OP. Yes you can use your contactless card at a retailer for a higher purchase. They will ask you to put it in the PIN terminal same as you would a non contactless card.
