    If you (anyone, not just you ;)) use Ebay you must offer Paypal. That's part of the rules. It doesn't mean you can't take cash, cheque etc instead.
    Getting them to sign a note that they have collected the item is useless* if they decide to scam you, as ebay's T&C's only allow for proof of postage/ trackable courier as evidence.


    *Should the scam escalate to you taking the buyer to court it would probably help, but until then Ebay won't recognise it.
