Talking bout Sue Ellen . . . . has anyone watched the new version of Dallas (at US pace) was surprised how good it was and will happily recommend it when its starts on Ch5 next month

If you (anyone, not just you) use Ebay you must offer Paypal. That's part of the rules. It doesn't mean you can't take cash, cheque etc instead.
Getting them to sign a note that they have collected the item is useless* if they decide to scam you, as ebay's T&C's only allow for proof of postage/ trackable courier as evidence.
*Should the scam escalate to you taking the buyer to court it would probably help, but until then Ebay won't recognise it.
