Dilemma over wedding breakfast menu

We're having a small wedding (30 guests) and the menu is proving difficult for us.
Our first choice is salmon for the main course but one of our friends hates fish. It's common knowledge and a running joke between us over the years so we feel if we go with salmon we'd be saying "we know you don't like it but tough".
Another guest we know also doesn't like fish.
A lot of people aren't keen on lamb so we're left with chicken or beef.
My OH thinks chicken is too plain for a wedding so it looks like it will have to be beef.
We don't want to give people a choice of menu as this will increase the budget and if we serve the two non-fish likers with something else then it wouldn't be fair to everyone else.

If only 2 don't like fish, why not just go for this & give the fish haters the veggie option instead. Most places seem to include the veggie option in the package.0

Agreed... go with the fish but make sure there is a really well considered veggie option. Sometimes I read menus and the veggie option appeals MORE than the meat ones - so it is possible to choose something that feels special & not 2nd rate in comparison to the meat dish!0

Most venues that I have looked into are happy to offer a veggie/vegan option too, could you talk to them about this? Either that there are vegan's that don't eat meat so you need salmon + something else or that there are veggies and your first choice is beef, so you would need beef+salmon?
How close are you to this friend? I personally am not a fussy eater but hate fish, if a friend approached me and said she was wanting salmon at her wedding and would I eat a veggie option I'd be touched she'd thought of me.

Vegetarians don't eat fish either, pescetarians do. So, if they are 'proper' vegetarians you'll need to avoid both meat and fish. I'm not veggie but don't really like fish so I'd be a bit disappointed to be served with salmon (though would completely appreciate it's the happy couple's decision). I think chicken is such a popular choice at weddings because the vast majority of people who eat meat like chicken. I had chicken at the most recent wedding I went to and it was beautiful, not dry in any way, which is what a lot of people worry about with chicken.0 -
I dont like fish but would be fine with a veg option if the couple had chosen fish. We had chicken beef or veg option on our menu but wouldnt have paid extra for a choice. Some venues did suggest that but it put me off tbh. Will they charge for a veg option? You could try negotiate but i think the salmon & veg option would be my choice if i really wanted salmon aslong as they didnt charge for the 'veggies'. Our veg option was goats cheese tart.0

i also hate Salmon, but as long as there is some veggie alternate, i'd be happy (surely they can whip up a simple tomatoe soup as the most simple alternate)
but you'd have to double check whether people have to say they are veggie way ahead of time, or can say on the day. I am not veggie, but don't like fish at all so if i was only asked beforehand I'd be stuck on the day (and just have to eat bread roll, which would be fine if main course was something I'd eat like chicken/beef)0 -
You should go with your instincts, if you really want salmon, stick with it. It's your day and you can't possible please everyone - and shouldn't even try to. I'm sure they won't think: "we know you don't like it but tough", if you offer veggie as an alternative. They'll see that you are trying to accommodate their preferences.
I can see where your OH is coming from though ... I was adamant last year when we got married, I wasn't going to have 'boring' chicken, but after sampling the options (which were all lovely!) we had chicken after all and it was beautiful. Our wedding breakfast is still talked about between our friends.:wave:A highly active brain needs feeding often0 -
