    Thanks PP,

The plan here is STC as usual-especially dependent on whether I can get a nice bit of lamb for sunday. If not, we'll be having guinea fowl

Su aug 19 roast lamb, sticky onions, roast spuds & veg
Mo aug 20lamb in black bean sauce with rice
    Tu aug 21shepherds pie hash
We aug 22 smoked haddock risotto
Th aug 23 pasta with pepper beef ragu
Fr aug 24 salmon, new potatoes & veg
Sa aug 25 jerk chicken (or southern fried/baked chicken) corn on the cob, baked sweet potatoes & coleslaw
Su aug 26 slow roast belly pork, potatoes etc
  • Can I ask, when you slow roast the pork...is this in the usual oven or slow cooker and does it go like the american pulled pork?

    Thanks

    PP

Oh, normal oven (don't have a SC-gave it away as it all tasted the same!) cook for 3-5 hours, high heat to begin with so as to get crackling, then turn it right down and cook until really tender. It isn't quite like pulled pork (you could pull it apart with forks, but pulled pork tends to be with shoulder, so less layers of fat than belly iykwim) but is DELICIOUS! I sometimes make a rub with salt, fennel seeds and pepper for the underneath and the skin.
Then remove the cracking at the end and cut into slices (or pull apart) the long slow cooking renders the fat out from the belly, so it is less fatty than if it was grilled in slices or quick roasted. YUM!

First of all, thanks PP for starting the thread - hope you have a lovely time :)
Hotcookie - your Pasta and Pepper Beef Ragu sounds amazing - any chance of the recipe? (and apologies if I've missed it on a previous thread:) )

Here's what we'll be eating chez Kitchenbunny this week:

    Saturday: BBQ
Sunday: Pasta Bake using up any BBQ Leftovers
Monday: Freezer Meal 1 - Moussaka with 1/2 Garlic Bread
Tuesday: Freezer Meal 2 - Toad in the Hole (an experiment from a while ago to see if an unbaked Toad would freeze ... now we'll see the results!)
    Wednesday: TBC
Thursday: Chicken Curry with Brown Rice & Spinach
    Friday: Shepherd's Pie
    Saturday: TBC

There's a few variables this week - I'm not sure if Mum'll be cooking for me on Wednesday night and I've no idea what we're doing on Saturday next so can't say yet. I do know we're trying to cut down again though, so I'll be doing my utmost NOT to buy chocolate, crisps, etc, and will be glad (personally) when the BBQ is out of the way - lots of extra costs!

Anyway, have a lovely week, everyone. Loving the mealplans.

    K xx

Its actually a stew recipe-but last time I made it with a chunk of brisket or silverside, and then shredded the leftover meat into the leftover sauce. I have it frozen in 300ml portions-which is loads for the pair of us (even though we are greedy, it is a really rich sauce, and you do not need a lot) I think I used 1kg of meat, we had a roast type dinner with lots, then had about 10 portions for the pair of us in the freezer. It is one of my easy, thursday night, might get caught at work, dinners

I have previously posted the recipe here

It is really delicious. And the Bocca book has some lovely stews in it, amazing sounding sausage recipes and quite a lot of offal recipes, so you could almost call it frugal ;)

I'm a bit late with mine this week:

Friday - out with friends - sadly I got over-ruled on where we went, so we ended up with burgers / sausages in a bun, which was cheap but not particularly inspiring :(
Saturday - pizza from the supermarket deli counter, to use up a voucher I had to use before it went out of date today
    Sunday - chilli-stuffed baked marrow
Monday - cider-braised wild boar and apple sausages with lentils
Tuesday - Tex-Mex burrito (this week's new recipe - I'm going back to trying to have at least one new recipe every week)
Wednesday - roast marrow and herb pesto lasagne
Thursday - scampi, chips, and HG French beans

hotcookie - that beef stew recipe sounds amazing. That's firmly on my list for the next time we have some colder weather. :)
Back after a very long break!

Late posting as I've been away!

CCP your meals sound awesome, especially the marrow ones - do you grow your own? Also like the sound of the wild boar sausages!

Sunday - we had HM pizza (HM dough in the freezer) with lovely deli bits a friend bought me for my birthday - balsamic onions and fancy olives - plus mine had mushrooms and OH's had salami.

Tonight - we're having veggie shepherd's pie with peas (red lentils and other pulses you can be bothered with, cooked up with root veggies and onions cut up quite small - I have carrots & parsnips today but usually use turnips as well. Add some standard bisto, which is vegetarian, and top with mash and cheese).

    Rest of the week:

Veggie chilli with rice, cheese and yoghurt - already made and frozen the chilli for handiness

Steak stir fry with noodles and a honey, soy and chilli sauce (to make one steak stretch to both of us, which will no doubt dismay my OH lol).

A Brazilian chicken dish with coconut milk and salad

Some sort of veggie tomato-based pasta dish with salad

As usual, a night left free in case we go out or need to use up leftovers. Otherwise we can have some sort of vegetarian stew type idea or raid the freezer.

Need to make bread today and some sort of soup for my lunches. Bought the usual cereal, fruit and crisps for breakfast and snacks, and ham/tuna for OH's lunch sandwiches.

Hope everyone has a good week and sticks to their plans!
