They are really easy, of late I've been using up all the 1p sponge mixes but I normally use the hummingbird vanilla cake recipe.
Just bake normal cakes, you can add raspberry extract. When cooked cut a hole out (keeping the very top layer) spoon in jam or conserve, replace lid.
Top with double cream mixed with icing sugar, sprinkles and a fresh raspberry.

These are 1p mini Victoria sponges filled with cream and custard, topped with cream icing and raspberry.
