Can we both retain NCB?
My wife and I currently have a car each but are cutting down to one as that's all we need. We currently both have full NCB.
Can we both keep this by taking it in turns to insure the remaining car year on year? Then if we do need another car in the future the insurance will still be cheap.

Technically I think you can.
You will need to have a chat with the broker though so you don't have to keep swapping the ownership over! Some insurers will ignore the registered keeper issues for husband/wife but you'll need to ask them first.

Some insurers don't seem to worry about who the registered keeper is at all as long as the vehicle owner is the policy holder.
As said above, you may need to swap over policy holder every two years so that you both retain your NCB0
