I have started a business showing clients otters, badgers, red squirrels etc. I am not taking them to the site they are following me to my hides and looking at the wildlife.
I need to get public liability insurance; can anyone offer advice on what to get and a business who can supply me with this insurance

If you came to me, I would think of a more common trade, I would suggest looking at companies who have schemes for "Tour Guides". You will need to speak to them to explain your own circumstances and that your not a tour guide as such.
What you have to remember is the person you speak to will not fully understand your business and that they will have to speak to the underwriter who will also not fully understand it. Insurers work on the worst case basis, they look for what can potentially go wrong and what it will cost them.
It will make it easier for them and you if you sit down and write down bullet points of what you're doing, any things you do to make it safer, any relevant training / qualifications or experience you have (If you have first aid training mention it).
They may be concerned about accidents in a dark hide, so if you have lighting etc mention it.
This company may be able to help, if they can't don't be afraid to ask them if they can recommend anyone as they may know someone.
