Not buying the paddock

Houses with paddocks are like gold dust and attract a premium. Def buy with the paddock, it will be a good investment. As said, you can rent it out for horses, or grow hay and sell, rent to local farm, or just use it as ammenity land for yourself to walk the dog, or for the kids to play in.
How big is the paddock?
Just to give you an idea of its value - agricultural land is about £6000 an acre. A pony paddock of an acre can easily be worth £15000. A pony paddock attached to a house, could easily increase its value by £50000.

A paddock pushes the price of a house up considerably if it's of a size capable of housing Jemima's pony, but it's unlikely to make you any serious money.
I have a couple of paddocks and they cost me money to keep them as decent, weed-free and fenced agricultural land. I charge for their use and for the hay crop, but there's maintenance to be considered, which also has a cost in time if one does it personally.0
