What can I do with wine?

I was given a bottle of fizzy wine recently but we don't drink. Is there any way I can use it up in cooking? It's a rose - is that a sweet wine? If so it won't go well in a bolognese.
We've also got a bottle of red wine which someone gave us 5 years or so ago which I will eventually use in cooking (it's probably turned to red wine vinegar by now anyway!)

I seem to remember my DF using some sparkling rose wine in a risotto last time I visited - I thought it was a bit of an odd idea but it tasted really nice. (Sorry, dad, I should have trusted you! :rotfl:) I think it was a chicken and mushroom risotto but I think it would work with most things as long as the wine isn't too sweet.Back after a very long break!0

I wish I'd read this earlier. For the first time in absolutely ages I decided to make a risotto for dinner and never thought of putting the wine in - I didn't know risotto normally did have wine in0 -

Risotto can have wine in or not, it isn't necessary just a nice to have. I generally put a splash in if I have wine open anyway, but if I'm not having any wine I leave it out and it's still fine.0 -
