plum wine???

i desperately need an easy recipe for plum wine pref one that only requires pums sugar and some yeast (as i have these!) does anyone have one thats tried and tested? thanks x

I can give you a tried and tested recipe but it does require pectic enzyme (which I believe many supermarkets sell), from a rather old book which is falling apart as it was my OHs 'bible' for wine recipes. not one failed us!
Plum Wine
6lb Plums (Victoria are best - but other varieties can produce a good wine)
3 and 1/2 lb Sugar
1 Gallon Water.
Yeast and nutrient; pectic enzyme
method
cut the plums in half and and crush them in your hands. Take half of the water and bring to boil then pour it over the fruit pulp. Leave for 4 or 5 hours and add the rest of the water (cold) and the pectic enzyme.
Leave for 48 hours, strain. should be about a gallon of juice. Bring this to a boil and pour over the sugar stirring to dissolve. Allow the liqour to cool to 70F and add the yeast. (ideally Bordeaux or Tokay wine yeast - or use a teaspoon of granulated dried yeast). pour into the demi-john and fit the airlock. When the wine begins to clear siphon it off into a clean demi-john and fit another air lock. when ALL fermentation has finished rack into clean bottles and cork and label.
