Getting the right tax code and Allowances.....

Hi All,
Apologies for asking this and I will shut this thread down as soon as someone can help me.
I have been out of work for a while and recently got my dream job working in catering.
I do get paid very well but I do work 18 hour days and the tips bring me up quite a bit too.
My employer has out the tips into our wages so that we get one single payment each week. Currently I am on probation.
I am on BR tax code at the moment which is incorrect I know but how do I go about getting it to the right tax code?
Secondly they are looking to make me the head chef in a months time as long as I pass the probation. I know that the personal tax allowance gets used up pretty quick but how does that work from being contract worker week to week to a permanent worker monthly.
a little detail for you.
weekly I earn 240 pounds per a day.
weekly wage £785 pw
I think it should be 830 ish
when I go monthly pay it will be 60,500 per year or £3490 per month?
Is this right? or due to my allowance will it be a little bit more to start off with?
And I presumably can claim back the overpayment and when does that get paid?

I just want to know the numbers are right as my gf should be giving birth soon and need to make all the money work best for us as possible.

Assuming this is your only job you should probably be on 810L download a P46 from HMRC website and hand to your employer. Do you wash your own Chef Whites? If so you might be able to get laundry costs included in your code to make it a bit higher?0
