  • I love Halloumi! That's pretty much all I eat when I'm in Cyprus, and still eat it on a regular basis now I don't live there. We're actually having it for tea tonight :)

    It doesn't really need any oil, as it releases enough liquid to cook itself when in a non-stick pan. I always used to use oil, and it can make one helluva mess. Kitchkitty is right though - it's not quite so nice when overdone. Word of warning though, it has a slightly rubbery texture - this is normal!

    It goes so well with tomatoes, salad or salsa (tesc* fresh salsa is best IMO) with pitta breads. Ahh, wish we could get decent salsa here!

    Right, off to make the salad :)

    If i wasn't on strike from cooking for a bunch or unapreciative people i'd try one tonight....tomorrow it is xx

    Word of warning though, it has a slightly rubbery texture - this is normal!


    Oh yes it so does...we nicknamed it "squeaky cheese" :rotfl::rotfl::rotfl::rotfl:because it can squeak when you bite it especially if it's started to cool a little.

    Echo halloumi with watermelon :) I do a salad with halloumi, watermelon, red onion and chili oil. Yummy!

    My mum does a ?Nigella recipe with butternut squash roasted with Stilton and walnuts and serves it with sausages, roasted in honey, wholegrain mustard and oil. It is such a simple meal, but very yummy! She sometimes serves it with jacket potatoes. Ultimate comfort food!

    I also love squash and blue cheese risotto and roasted butternut squash and ginger soup
