Halloumi and butternut squash?

I have a block of Halloumi in the fridge ys yet has a date of june 2013 on it (go figure) but have no idea what to do with it, having never tasted or cooked it before!

Also got a beautiful large organic butternut squash ys from Mr T's last night for 6p, again have never cooked it but would love to try, any recipes appreciated xx
I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
Card #2 £6. I will not be skint at Chistmas this year!

    Halloumi - cut it into slices and fry it (it doesn't melt, just crisps up deliciously!) and serve it with lemon juice and pitta bread. Or you can thread it onto skewers with chopped peppers/tomato/courgette and grill it for vegetarian kebabs.

    Butternut squash I just split in half, scoop out the seeds, brsh with oil and roast until tender then serve as a vegetable accompaniment. Or it makes a delicious soup.

    Both are really tasty, don't be scared!

    Thank you very much, i suppose sometimes the simple things are the way to go, there aren't many foods i dont like, but i'm not a reall salt lover (hence the halloumi)

  • You could make a butternut risotto and top it with cubes of fried halloumi, the halloumi cheese also is really nice if you put it in a basil and olive oil marinade for a couple of hours before frying it and serve it with a grilled courgette and sundried tomato salad. Both really easy to do, and yummy. Hope that helps, Cheers Lyn. p.s. the other lovely thing to do with butternut, my favourite, is peel it and steam it until it's soft then blitz it to a puree with some butter and black pepper and use it as a mashed potato alternative, it's lovely!

    I had halloumi for the first time last week and it was really nice! I was worried I wouldn't like it, but I just fried it in a splash of olive oil and had it with some vine ripened tomatoes in a sandwich!

    Just don't over fry it like I did with my second batch though, it only needs to be lightly golden and crispy (not look like it's spent to many hours on a sun bed)! :rotfl:

    Any recipe for pumpkin works for butternut squash: pumpkin soup, pumpkin pie, pumpkin bread, pumpkin scones. It curries really well so you could try cubing it and throwing the cubes into any curry sauce in you repetoire (Thai green curry works really well).

    Another yummy idea for halloumi (courtesty of Hugh F-W) mix a small amount of smoked paprika plus S&P in with a small amount of flour, toss the slices of halloumi in this, tap off the excess & then pop in a hot pan with a tiny amount of olive oil & cook until the coating has crisped...delicious.

    I've never cooked halloumi but love the sound of draagonfly's suggestion above.

    I roast squash in the oven with red onions and dried sage. They seem to go really well togther.

    Make sure you eat the halloumi while it's hot, going cold again doesn't do it any favours! When just fried, or on a BBQ kebab with some roasted peppers etc, it's lovely!

    They use Halloumi at one of my local pubs as a vegetarian "fish and chips" Simply dipped in beer batter and deep fried. It was excellent.
