    Hi
    I have never really taken to beans and pulses - mainly because the meals i've tried to cook with them are bland and boring.
    I would like to try something more interesting but time is often a problem. I leave for work early and come home fairly late (and very hungry).
    Is there a tasty recipe that is either quick or can be put in a slow cooker or batch cooked at the weekend and frozen?
    I'm also on my own so I am looking for something that will either freeze or can be cooked in single portions.

    Any ideas?

    I might have already posted this on the thread Penny has linked to, but I'd recommend veggie chilli - I make mine with lentils and kidney beans so that's two lots of pulses in one go. I usually batch-cook it in a pan on the stove as it freezes well, but it might well work in a slow cooker too.

    I'm also very partial to dahl (Indian lentil curry) - I usually make it in a thoroughly non-authentic way, using a blob of curry paste from a jar, but it's still pretty good if I do say so myself. :) It only takes about 20 - 30 minutes to cook, but can also be batch-cooked and frozen.

    I'm pretty partial to pulses, as you might be able to tell. :D

  • I think lentils are a good start because they cook quickly. Some pulses (for example red kidney beans) require boiling for 10 mins before they could be cooked in a slow cooker. Lentils are good in soups and stews. I like lentil carrot and coriander.

    For anybody who is unsure what to do with pulses I can recommend Rose Elliott's two books "Not just a load of Lentils" and "The Bean Book". They are probably out of print now (mine are yellow with age) but you can probably still get them in charity shops or Amazon. They are filled with intereresting recipes for anybody who is on a budget, and if you have an Asian food store nearby where you can buy cheaply in bulk, you should never be short of ideas for inexpensive nourishing meals.

    HI,
    Hope someone can help. We have a vegetarian friend coming over for a meal tomorrow night.
    I have found a nice looking recipe which involves using green lentils.

    On the lentils packet, it says soak them for 30 minutes, boil for 30 minutes and then simmer for 45 minutes.

    However, in the recipe it just says boil for 30 minutes in the sauce - which is made up of tinned tomatos and vegetable stock.
    Do I need to cook the lentils as the packet suggests? - is it a safety issue?

    Hi there :) I never soak my green lentils, but it doesn't say to on the packet. If it instructed to on the pack, I might well be inclined to do so just in case they were tough.
