DropBox is good.
Edit: Why plain text? You can create .doc files and read/edit them on your phone and linux with something like openoffice and DocsToGo.0 -
Dropbox works great for me and is available for Linux, Windows, Mac, Android, etc. and you can access the files through a web browser if you can't install the software (e.g. on a work PC or from a friend's house).
I used Truecrypt to create a couple of encrypted file containers, and it seems to work well (although I only use small files... I imagine that syncing large encrypted volumes would be a bit tedious).

I've decided to copy things to dropbox rather than move them there, so that I still keep the master on my PC.0 -
