Where to go in September for some sun, using Hotels.com free nights??

HI All
We need to get away later this year after a busy couple of months buying our first house whilst I am not working and recovering from a big operation. We want somewhere lovely for a couple to go and escape for a week, somewhere scenic, quiet but with a few bars and eateries etc... a nice 4-5* hotel, preferably adults only resort. We also would go B&B, half board or self catering to keep the costs down but the hotel will probably have to be through Hotels.com as we have some free nights to use. We do like Santa Eulalia in Ibiza just to give you an idea of sort of place.
Basically we are looking to go away for 1 week for both our birthdays in Sept, we would ideally like to go either Sat 15th or Sun 16th Sept for 1 week from Leeds, Newcastle or Manchester. We would Ideally like a shortish flight, 2-3 hours due to my condition and wondered if you peeps out there could let us know where is good for guarenteed (or almost guarenteed) sunshine at this time of year, any nice hotels or resorts you can recommend as this holiday is very much needed.
We need to do this holiday as cheap as possible but would obviously like to get the nicest hotel we can, in a lovely resort. We actually have 5 free nights with HOTELS.COM to use up with a value of approx £95 per night, so we were going to use these and just pay for the extra 2 nights and hope some budget flights come up before we go, so we need somewhere that we will be able to get budget flights to before Sept.
If you could give us any advice, places you've been that are lovely then please feel free to reply with any info or ask us if you need to know more.

The Atrium Hotel in Skiathos is gorgeous and around the calibre you are talking about. It has a pool and 10 mins from beach. Watch out for the Melteme wind, though it may have gone by then.-0
