    Ooh, I could do with one of those 48 hour days please. Dh and I were at the lottie till nearly 9 last night and there's so much more we could have done with a few extra hours :rotfl:

    Still, lots planted out or cleared out and thoughts are now turning to finding good chutney recipes to deal with the hoped for abundance. I've found a Nigella recipe for gooseberry chutney which I hope to try, but want to find something suitable for using excess French beans, courgettes, squash. Does anyone have any favourites they could post?
  • Oh Yes I DO!!!

    French Beans steamed until they are just, but only just done, then dressed with a mayonnaise and Lemon juice dressing (just add in some lemon juice and black pepper to ready made mayo) known in our house as 'Squeaky Bean Salad'.

    Courgettes in courgette and lemon risotto - make a plain risotto the usual way and just as the rice is almost cooked sizzle some cubed courgettes in olive oil until they start to frizzle round the edges and add them with the zest and juice of a lemon and lots of black pepper to the risotto. Top it with parmesan cheese.

    Squash, peeled, deseeded, cubed in medium sized cubes and the same amount of peeled and cubed sweet potatoes, drizzled with olive oil, paprika,black pepper and roasted in a hot oven until beginning to brown round the edges (check it is done with a skewer) and then sprinkled with feta cheese, some olives, some roasted red peppers from a jar and fresh herbs, I like basil or oregano is lovely. Some whole toasted almonds or hazel nuts is nice too. If you like you can add in some extra olive oil and lemon juice to make a dressing, we like it either way!

    Had a bit of an accident today, DH was supposed to take some bits down for the school fete on Saturday and one of the heaviest boxes dropped on my blurdy toe, this was followed by a lot of fluffing and hollyhocks :p then as I was hopping around I caught the other toe on the desk :eek: _pale_ this created yet more expletive deletives. And now they are just throbbing :( I have another 8 weeks before they heal so I really must be more careful:(

    Just popped in to say hello.

    Still prepping here, but spending so much time in the garden (on top of looking after 4 kids, OH and attempting to be a full time freelance writer lol)

    Will probably be AWOL whilst the good weather is about. So far garden is looking good. Got broadies in full flower, as well as my greenhouse toms. Some early green strawberrys and a load of SB flowers as yet so a bit late.

    Courgettes are producing some early flower buds, but no actual flowers out as yet. Plenty of spinach/perp spinach and salad leaves galore at the mo.

    French beans and runners quite big, but no where near flowering as yet, which I would have thought is about right timing.

    Some beetroots and carrots that were started under glass then under cloches are looking pretty big, might get some beets within a few weeks.

    So far so good, just need to keep up with this nice weather :).

  • Would this be a good time to tell you that we have courgettes and peas set and growing on in the polytunnel? also beetroot almost big enough to pull and we've been using lettuces out of it for a month now, Cheers Lyn xxx.
