    I see you are already covered for the next couple of days :) We do quite a few things in the slow cooker now, basically anything I would have just stewed in a pan or dish in the oven. For instance, I have sweet and sour tofu on my menu for next week, also mince and onions, and a tomatoey med-herbed bean stew. This week we have done Irish Chick Peas (kinda Irish Stew but chick peas rather than meat, done with in a yeast extract stock and some rosemary - we served it with cabbage but you could add it to the stew.) I have done Saag Aloo, Chinese Curry, and various other curries. I love my slow cooker! In fact, I think there is a slow-cooker thread somewhere with lots of recipes/ideas on you could have a browse through.
