hey guys,
when agencies are checking work reference - how deeply can they check if I really work for that exact company for that exact salary I said? Is it just about them calling to the company to confirm what I put down in the papers or can they check it somewhere else as well?

They will write to the employer and ask them to confirm the information you have supplied.0

As B&T says. Some LLs/LAs will also insist on having sight of three months' worth of payslips
OP - your query makes it sound as though you are considering "being economical with the truth" or does your pay depend heavily on commission?
If your tenancy application subsequently fails, because you lied and were caught out, you will have to kiss goodbye to application fees etc incurred by you..
Few, if any LLs will want to take on a T who can't be straight from the off.
If you did manage to secure a tenancy, perhaps with assistance from an employer who was minded to be "creative", note too that there is a discretionary Ground for the LL seeking a repossession of the propertyGround 17

In addition to the payslips they might ask to have sight of your bank-statements as well as a double-check that you can indeed afford the rent being asked.0

They *may* ask to see your bank statements but that does not mean that you have to offer them up. Bank statements have very limited value to an LA/LL0
