Short term car insurance questions

I am considering buying a car from a family friend. The car isn't currently being used and the owner has said that I can use it for a week or so to make sure i'm happy with it.

Am I able to insure it for a short period of time despite not owning the car and without the owner on the policy?

Secondly is it possible to have more than one insurance policy active on a car at anytime?
