Minced cooked ham and chicken = ?

The chicken is what was retrieved from two chicken carcasses which have been cooking in the slow cooker.

The ham I cooked earlier in the week. Now blitzed in the food processor.

Stock from slow cooker is currently reducing.

I have the usual array of herbs and spices, mustards, balsamic vinegar, pesto and stock cubes

I don't have any cornflour but do have rice/plain flour and gravy granules.

Veg' wise there is broccoli, cauliflower, onions, peppers and frozen peas.

Also quinoa, rice, lasagne sheets, spaghetti, couscous and bulgar wheat.


There it is Ladles and Jellyspoons - what should I make for dinner with that lot?:o

    I would make:

    Ham, chicken and veg soup, break up the spagetti and add to stock to make soup more filling

    Ham chicken stew with onion, cauli, brocolli bulgar wheat

    If you have any milk, butter I would make a white sauce and make a lasagne with mixture of meat, onion, broccolli, cauli, peas - maybe a bit of cheese ? on top if you have any

    Savoury rice - chicken/ham stir fry brocolli, peppers, onion, peas.

    I'm sure others will be along with many more ideas

    Rissoles/croquettes if you have breadcrumbs, add finely chopped onion, cooked peas or peppers to meat...

    if meat needs bulking out, make arancini (rice balls) or stuffed peppers - both recipes use a rissotto type filling...can be used without cheese, but for depth of flavour you need parmesan ideally...? add a spoon of pesto instead?

    serve the rissoles or arancini with just a simple spaghetti n basil tomato sauce...

    The ham, chicken, and broccolli (or frozen peas) would make a lovely pie. If you have butter, could make an easy short crust pastry to cover. Making me hungry! :drool:

    Good suggestions so far. :)

    The only thing I could think of making was lasagne.

    Cheese: Cheddar in the fridge, feta and mozzarella in the freezer.

    Going to have pork chops tonight so please keep the ideas coming :)
