Hi
I have started getting into home baking and id like some ideas to put in DD lunchbox. our school has a strict no chocolate policy which makes it quite hard. DD is also not a big fan of dried fruit. I have done banana muffins and cheese muffins and mini iced cakes. Does anyone have any other easy ideas??
thanks
Claire

How about flapjacks, mini fruit pies, wholemeal shortbread, cheese straws, mini quiches, sausage rolls, scones, slices of a larger cake, (sponge, coconut cake etc)? Your little one might like different types of dried fruit, such as apricots and cranberries even if s/he does not like the usual currants, raisins etc. Lots of kids like raisins uncooked even if they don't like them in cakes and things (they aren't very nice if they dry up or get a bit burnt, are they). Apple cake is good - weigh 2 eggs (in shells), crack eggs into a bowl and add the same weight of sugar. Whisk till thick, then add the same weight (as sugar) of flour, pour into a greased tin, push bits of cut up apple into the surface, then bake at 180 degrees till golden. This is nice as a cake or as a pud with custard or ice cream, and you can use up grotty apples from the fruit bowl if you cut off the bad bits.0
