When we get an Indian takeaway they include Bombay Aloo as a freebie, but we rarely eat it, so I now have 2 large containers of it in the freezer.
It's very mild (bit boring) and we don't normally eat potatoes with our curries (I love rice OH loves naan). Any ideas of how I can reinvent them/use them to make a tasty dish?

You could use it as a base/start for a full blown curry, just add some more spices and the meat of your choice and anything else that you fancy.
I like to add cooked chicken, a couple of chopped tomatos, a red pepper (sliced rather than chopped) and a small tin of pineapple chunks.0 -

Sounds yummy, I forgot to mention that I currently don't have an oven (though as they're in the freezer at the mo that's OK)!
Hubby only eats chicken tikka massala or tandori chicken cooked at home.

When you do have an oven you could add spinach and make spicy potato and spinach pastries.
Get shop bought puff pastry and fill with bombay aloo and spinach and bake in the oven-delicious. You could chuck some in the blender, add a little stock and have a creamy, warming soup?0

How bland is bland?
Fry an onion then add a chopped fresh chilli, some chopped fresh garlic, half a teaspoon of ground cumin and maybe the same of coriander. Fry until the aroma rises and dump in a tub of bombay aloo plus, maybe, a tin of chopped tomatoes. Simmer until heated through and thick. If it needs more "body" add some cooked meat or a can of cooked beans/chickpeas and simmer it for 15 minutes more.
Serve on rice or with nan.
Et voila! Almost instant curry lunch.)

Soup is a great idea though, never would have thought of that. - Think it would work with chickpeas and maybe some tomatoes, or alternatively parsnip.
Using them as a base for a curry is unlikely in this house unfortunately - not really into spuds enough to enjoy it, and I know I'm a tad weird but I find the idea of eating spuds with rice or bread (or other main carbs of a meal) unappealing.A waist is a terrible thing to mind.0 -
I think I'd turn them into a spicy bubble and squeak.0
