New to digital camcorder

Hi, Just bought a new cannon camcorder, before this I had a camcorder that uses mini tape cassettes. I started reading the user manual and I'm getting very confused with all its features. However, what I would like to know is whenever I shoot a scene and then turn the camcorder off, would the next scene I shoot be part of the previous 'file' or would I end up with loads of files. If so, how would I merge these together to form 1 'film'?
