Disney Cruise/Honeymoon with Kids

Hi folks, looking for some advice. OH and I are getting married in Nov next year (seems ages away I know) but we are deciding on what to do for honeymoon.
We went to Florida in 2010 and our eldest was 4 then and we loved it however baby No 2 came along in May last year so he will be 2.5 when we get married and I personally think its a bit young to take him to Florida and would like to wait till the following year before taking him when he will be 3. Wondered what other peoples opinions were on taking small kids to Florida.
We rented a villa when we were there before and I loved the flexibility that it provided but I would also love to do the Disney Cruise, anyone been and can give any advice and hints and tips. We also went in July before and I found it just too warm but I have friends who went for Christmas last year and in their photos they were all wearing jackets so not really sure what time of year to go?
