I make one using crunchy peanut butter and sweet chilli sauce, mixed together with enough water to make a pouring consistency - you can add some chilli flakes as well if you want it to be a bit spicier. Pour it over the veggies just before they're cooked and sizzle for a minute or so - it's very simple and surprisingly tasty.Back after a very long break!0 -

I don't always have swet chilli sauce, but I do similar with ketchup + lime/orange juice + soy sauce. A nice mixture is plum jam in place of the ketchup tooOk, you've got me with this one! How on earth do you make a vegan omelette? Is it made with some sort of egg substitute?
Chick pea flourYou can add some mashed tofu to the batter for a fluffier omelette but we like the storecupboard fritatta style one without tofu added. Still plenty of protein thanks to the chick pea flour. I mix it with self raising flour to get it a bit lighter and less "eggy" flavoured though.
Love and compassion to all x0 -
That's really handy to know.
So, do you just mix the flour with water to make a paste, then cook?

I mix the chick pea flour to a paste with water to get all the lumps out. Then add approx an equal quantity of self raising flour and more water to make a thickish but pourable batter. If we want a flufier omelette, I roughly mash in some firm tofu now as well. Season it as you like (onions and/or chopped chillis are good too
) and whisk in about a tbsp of vegetable oil. Fry as you would a pancake in a frying pan with a little oil until set, then flip and continue cooking for a minute until golden on the underside.
It's not only handy as a storecupboard recipe, but cheaper than using eggs too
I just had toast this morning (well with homemade bread so a bit more substantial) but reallly fancying omelette with brown sauce now lol.Love and compassion to all x0 -
Thanks, I'll have to give that a try sometime.0
