What veggie to can?
I have a small space (backyard) where I intend to plant veggies and eventually do home canning using my harvest. Any suggestions on the best veggies to plant for my intended future canning? I know this method will really help me save a lot and at the same time store food at home.

will you be using a pressure canner? This is the only safe method with veg, due to the low acidity and risk of botulism. tomatoes are good to bottle without pressure, as are fruits. I brine beans and make sauerkraut and pickle beetroots, all of which work well. Pressure canners are impossible to obtain in the uk, you have to get one from the US and import it
DEhydrating also works safely and I use it a lot for spare vegetables and fruits0 -

You're going to can your own food?? Does the canning machinery cost a lot to set up? Will you save much in the long run? Why are you choosing to can rather than pickle / jar / bottle?
I suppose if I were doing it (I wish!!) I'd pop along to supermarket, scan the shelves and decide what I could grow with ease - peas, beans, fruits, maybe even sweetcorn/

Yes you are right. When I said I intend to do home canning, I didn't mean that I will do literal canning. I am planning to put my harvest into jars or bottles for preservation and future use.:)0
